Spelt Pizza Bread

  • 2 cups/500mL SPELT PANCAKE MIX
  • 1 tsp/5mL Basil
  • 1 tsp/5mL Oregano
  • 1/2 tsp/2mL Garlic Powder
  • 2 cups/500mL Grated Mozzarella Cheese
  • 1/2 lb/250g Sausage, chopped fine
  • 1 Egg
  • 2/3 cup/150mL Milk
  • 1 tbsp/15mL Oil
  • 1/3 cup/75mL Tomato Paste
  • 1 1/4 cup/50mL Grated Parmesan Cheese 

Preheat oven to 375F/190C.
Grease 12x15" (30x38cm) cookie sheet.

In a large bowl combine MIX with basil, oregano and garlic powder. Add mozzarella cheese and chopped sausage to dry ingredients. Stir until MIX coats and separates the cheese and sausage. Make a well in bowl.

In a small bowl beat egg until combined. Add milk and oil to beaten egg and beat to combine well.

Add liquid ingredients to MIX and stir only until all the dry ingredients have been moistened.

Turn out onto greased cookie sheet. Flatten and form dough into a rectangle, approx. 1/2" (1.25cm) thick. Form small edge around outside. Spread with tomato paste.

You can add any of your favorite toppings or just sprinkle with parmesan cheese. Bake for 25-30 minutes. Serve immediately.
