Fruit or Veggie Muffins

  • 2 cups/500mL - Nunweiler's Whole Wheat Pancake Mix
  • ¾ cup/175mL - Sugar
  • 2 tsp/10mL - Cinnamon
  • ¼ tsp/1mL - Nutmeg
  • 3 Eggs
  • 2/3 cup/150mL - Vegetable Oil - 2 tsp/10mL - Vanilla

For Fruit Muffins use:

  • 3 cups/750mL - Finely chopped or grated firm apple
  • 1 cup/250mL - Chopped Walnuts

For Veggie Muffins use:

  • 3 cups/750mL - Grated carrots
  • 1 cup/250mL - Raisins

Preheat oven to 400'F (200'C). Either grease 18 muffins pans or line pans with muffin liners. In a large bowl, measure Nunweiler's Whole Wheat Pancake Mix. Add sugar, cinnamon and nutmeg. Stir to combine. Add either apples and walnuts or carrots and raisins to the Pancake Mix. Stir to coat the fruit and/or nuts well.

Make a well in the dry ingredients. Beat eggs to combine. Add oil and vanilla to eggs and beat to continue. Add liquid ingredients to Pancake Mixture and stir only to moisten ingredients. Spoon mixture into prepared pans. Fill ¾ full.

Bake approximately 20 minutes or until muffin springs back when lightly touched and are nicely browned. Remove from muffin pans and cool on racks.
