Prairie Date Loaf

Use NUNWEILER'S 100% Organic Whole Wheat Flour to produce a loaf that may be sliced thinly.

NUNWEILER'S Organic Whole Grain All Purpose & Pastry Flour will produce a more cake-like loaf.

  • 1 cup/250mL - Chopped Walnuts
  • 2 cups/500mL - Chopped Pitted Dates
  • 1 cup/250mL - Water
  • 2 cups/500mL* - NUNWEILER'S 100% Organic Whole Wheat Flour
  • 1 tsp/5mL - Baking Powder
  • ½ tsp/2mL - Baking Soda
  • ½ tsp/2mL - Salt
  • 1 Egg
  • 1 cup/250mL - Packed Brown Sugar
  • ¼ cup/50mL - Olive Oil
  • 1 tsp/5mL - Vanilla

* Can substitute 2 ¼ cups (550mL) NUNWEILER'S Organic Whole Grain All Purpose & Pastry Flour

Preheat oven to 350F (180C). Grease 8 ½ x 4 ½" (21 x 12 cm) loaf pan. Place chopped dates in saucepan, add water. Bring to a boil. Stir to combine well and set aside.

Spoon flour lightly into measuring cup. Level off and place into large mixing bowl. Add baking powder, baking soda, salt and combine. Add chopped walnuts; mix well. Make a well in dry ingredients. In a separate bowl beat egg well. Add brown sugar and oil, beating after each addition. Add vanilla. Stir date/water mixture and add to egg mixture.

Pour liquid ingredients into dry ingredients, blend only until dry ingredients are moistened. Bake for 1 hour or until loaf tests done. Cool in pan for ten minutes. Remove from pan. Cool completely before slicing.
