Our ORGANIC WHOLE GRAIN Buckwheat Flour , is made from Canadian grown unhulled Organic Buckwheat kernels. Buckwheat is not a wheat – it’s actually a fruit seed related to rhubarb but in the kitchen we think of it more like a grain. It is similar in size to wheat kernels but has an unusual triangular shape. Belonging to the Polygonaceae or Buckwheat family the plant itself is more bush-like than the tall slender reed like grains. Early settlers brought the plant to North America where it found its way onto the table of French Canadians who ate Galettes de Sarrasin – Buckwheat Pancakes or Crepes.

Buckwheat is one of the best sources of high-quality, easily digestible proteins. It is also a good source of Rutin, a flavonoid with various biological and physiological activities including antioxidation, anti-inflammation and anti-hypertension. Research done by the Department of Agriculture states that analyses indicate Buckwheat has an amino acid composition nutritionally superior to all cereals, including oats. It has a high content of lysine, a protein our bodies need and can’t make which is not as prevalent in most other grains. An excellent source of complex carbohydrates, our Organic Buckwheat Flour is high in dietary fiber (it’s whole grain) – important for promoting a healthy digestive system, aiding in weight management and reducing blood sugar and blood cholesterol levels, according to the Mayo Clinic. It is rich in essential vitamins and minerals like zinc and copper. If you want to add a nutrient boost to your diet – our Organic Buckwheat Flour will do it. 

Whole unhulled buckwheat is dark coloured and triangular in shape. When buckwheat is hulled, it is referred to as ‘Buckwheat Groats’. Cracked Buckwheat Groats are referred to as ‘Buckwheat Grits’. Roasted Buckwheat Groats or grits are called ‘Kasha’. When our WHOLE GRAIN unhulled ORGANIC Buckwheat kernels are completely ground it makes a pungent, earthy flour dotted with dark flecks from the outer hull. Because there is no gluten in Buckwheat it shouldn’t be used alone to make bread and is generally mixed with other types of grain. As well, the taste is quite strong so it is generally mixed to enhance but not overpower bakery products.

Is our Buckwheat Gluten Free?

Buckwheat itself is gluten free. Our milling facility, however, is not. We do purge our milling system between the production of any of our different flours, but because we are unable to completely 100% flush our system our Organic Whole Grain Buckwheat Flour may have up to 60ppm of gluten in the flour. While this is a minuscule amount it is important for those with Celiac Disease to be aware of this.
